Friday Flavour: Fried Spiced-Scalloped Potatoes

Like carbs? There’s no reason not to! (Well…there is but we are not going to go there.)
This is one of my favourite easy to make snacks: Potatoes marinated with all sorts of spices and herbs for seasoning and then fried with rosemary-infused olive oil. Bless the easy access to pre-boiled taters from the supermarket to make cooking much easier.
After frying, sprinkle some salt and pepper all over and you’ve got yourself some goodness perfect for an afternoon snack.
Make sure you stock up your spice racks!

Fried Spiced-Scalloped Potatoes

A simple potato snacks full of flavour and really easy to make!

Ingredients
- 500g scalloped potatoes, par-boiled
- 1 tbsp onion powder
- 2 tbsp fried shallots, finely crushed into a powder
- 2-3 leaves of fresh sage, chopped finely
- 1 tbsp paprika powder
- 1 tspn cumin powder
- 1 tspn coriander powder
- 1 clove garlic, pressed
- Half tbsp cayenne pepper
- Lots of black pepper
- 2 tbsp white pepper powder
- Half a cube chicken boullion, crushed (optional)
- 5-6 tbsp Rosemary-infused olive oil
- Chopped chives for topping
Instructions
- Mix all the spices and herbs together in a bowl
- Marinade and chill for about 30 minutes
- Fry in hot rosemary-infused olive oil till golden brown
- Drained. Sprinkle some salt and chives all over.
- Serve!
Notes
- Depending on your preference of spices, feel free to dial up or down on the usage of some of the spices and herbs used here.

I’m reading this at midnight, and it sounds like a stellar midnight snack, actually. When I make this, I think I’d do it more than once, and try a different spice combination each time. (This is what I do with other recipes – and it’s always frustrating when we find a perfect combination, but forget what we put in it!)
This makes for a perfect snack at midnight, Eli! I hear you with doing it more than once and trying a different combo, then forgetting that perfect recipe. I do it all the time. LOL
