Fabulous Friday Flavour: Omelette with Chives, Chillies & Onions

This omelette dish has always been a staple in our home. It’s usually served as an add-on dish complementing white rice, a meat/seafood dish with gravy and stir-fry vegetables. It’s something I grew up with and has since carried on the “tradition” with my own family.

The rice and a meat gravy dish would feel a little lonely without the omelette, and without it, the entire meal experience would not as satisfying. That’s of course, according to me.

Not too difficult to make. It takes all but 10  minutes of your time. If you have a leftover omelette, you can always eat it with bread and make an omelette sandwich for breakfast or lunch. 

Omelette with Chives, Chillies & Onions

Ingredients
  1. 5 eggs
  2. 1 red shallots, sliced thin
  3. 1 fresh chilli (green or red does not matter!), sliced thin
  4. 1 spruce of chives, chopped
  5. Half cup non-fat milk
  6. Salt to taste
  7. 5-6 tbsp of olive oil
Instructions
  1. Mix all of the ingredient together. Beat well
  2. Heat up a frying pan. When the oil is hot enough, pour the batter into the pan
  3. Once the bottom of the egg is somewhat set, flip over to the other side. Do this quick but gently so as not to break the omelette to keep its circular shape
  4. Fry for about 2-3 minutes before flipping over again
  5. When both sides of the surface appear a little browned, turn off the fire.
  6. Serve.

    • Hahaha! Maybe I do..it’s called sleep-deprivation and a little crazy! :p I try to post 2-3x a week..which, tehnically, isn’t often! I do try to schedule them when I get the chance to write in trying to “beat myself to it”. Thankfully, the kids go tot bed by 7pm..so after dinner and a little winding down, if I’m not working, I have a bit of time to pull something out of my ass! LOL.
