Fabulous Friday Flavours: Passion Fruit Flavoured Hokkaido Cupcakes

Soft, fluffy, light, spongy and an absolute delight! Come, meet the Hokkaido Cupcakes: it’s origin I know not of, and apparently has got nothing to do with Hokkaido, Japan, yet is a popular find in Asia. Texture-wise, it is very much like the chiffon cake, except this comes in a cup.

According to my 5 year old daughter, Spud, cupcakes always taste better when they are in rainbow colours.What’s a Mom supposed to do but to agree with her brilliant suggestion! She got to pick the flavours too, and with a choice of Vanilla, Chocolate, Lychee and Passion Fruit, Spud decided on Passion Fruit.  I was, actually gunning for chocolate. Dammit. 

So what’s in a Hokkaido Cupcake you ask? Well, pretty much the same as the Chiffon, but only with half the quantity of eggs used. They all came out of the oven tall and fluffed up, but the moment you take them out of the oven, they sink a little and the top went wrinkly. Oh well! It’s the texture and taste that count. Besides, you can always top it up with frosting to cover up the ugly, wrinkly tops. 

This is one of those cakes that is fun to bake with the kids. I’ve got my little kitchen helpers mucking about with this one. Never mind that they over-decorated their cakes with too much sugar or toppled the sugary stuff all over the table and the floor, but it was really such a joy to see them having so much fun with frosting and sugary decorations. 

Oh yes! They had their cakes and ate them too, all the while bursting with uncontrollable laughter. Funny little critters.

Ingredients
  1. 3 eggs, separated plus 1 additional egg white
  2. 112.5 grams sifted cake flour
  3. 150 grams superfine white (castor) sugar
  4. 1/2 tablespoon baking powder
  5. 1/4 teaspoon salt
  6. 60 ml vegetable oil or safflower oil
  7. 90 ml low-fat milk
  8. 1.5 teaspoon passion fruit extract
  9. 1/4 teaspoon cream of tartar (use to stabilise whipping of egg whites and allow them to reach maximum volume)
  10. Colouring: I used blue, red, orange
Instructions
  1. Make sure the eggs are at room temperature. Separate the eggs and place the whites in one bowl and the yolks in another.
  2. Preheat the oven to 170 degrees C and get the cups of your choice ready!
  3. In the bowl of your electric mixer, fitted with the paddle attachment, place the flour, sugar (minus 1.5 tbsp of sugar), baking powder, and salt. Beat until combined.
  4. Make a well in the center of the flour mixture and add the egg yolks, oil, milk and passion fruit extract. Beat about one minute or until smooth.
  5. Get ready empty bowls to separate the batter for different colouring.
  6. In a separate bowl, with the whisk attachment, beat the egg whites until foamy. Add the cream of tartar and continue to beat until soft peaks form. Gradually beat in the remaining 1.5 tablespoons of sugar and beat until stiff peaks form.
  7. Apportion the whisked egg whites into the batter equally into 3. Add drops of colouring to each of the bowl.
  8. With a large rubber spatula, gently fold the egg whites into the batter just until blended (being careful not to deflate the batter).
  9. To layer, pour the mixed batter (with egg whites folded in) one colour on top of the other until all the batter is used up in each of the cups
  10. Bake for about 30-35 minutes, or until a wooden skewer inserted into the center of the cake comes out clean. (When lightly pressed the cake will spring back).
Notes
  1. The cake will sink when you take it out of the oven. Don't panic! Apparently, that happens. (But if you have any tricks to prevent the top from sinking, let me know!)

Self-Improvement in 6 Words

Ever look up, and see that the month has passed you by?”

Eli, Coach Daddy posed that question at the start of his post and I immediately thought, “That was me last month! What’s the date today?!”  

But somehow, amidst September’s work madness, I managed to push out an article for World of Mom, worked on my Monthly Mystery Munchies and in between replied to Eli when he kindly dropped me a note inviting me to take part in his 6 word challenge for September’s Self Improvement Month. I have since forgotten all about this challenge when I hit the reply button to Eli with my contribution.

Needless to say, I have also completely forgotten that he would be compiling 6-word stories on the last day of September from bloggers, his friends, strangers and a few strange blogger friends that responded to his prompt until I saw StomperDad’s post on his version of 6-word Story Photo Prompt post 2 days later.

There are altogether 66 six-word stories on Self-Improvement which Eli compiled; mine’s #44. I thought it was going to be a toughie initially and did not think I could come up with any, especially since I was under a lot of stress. But his challenge got me thinking and actually, it was a welcome distraction to take a step back, surprising myself with just six words.

So, thank you Eli for having me and however complicated the selection process is to be a part of it, I certainly have enjoyed this and truly hope to be able to partake in it again.

A Crazy September

222: Is the number of blog posts left unread in my mailbox. Tons more if I include those from my WordPress reader.

2:  Was how long ago in weeks since I wrote a new blog post to fill up the gaps in between my scheduled posts.

10: is the number of days since I logged in to my dashboard (up until last weekend)

13: Is the pathetic number of posts I have only managed to publish last month. One of the lowest ever recorded.

ZERO: Is the number of blogs I have visited and commented in the last few weeks. 

Not because I have no interest to read, comment or have nothing to write about, but because, work has pretty much kept me completely away from blogging time.  Work has spiraled out of control; far too much for my liking and way too much than I could cope. I have fallen off the band-wagon (from blogging) and I hate it.

If my working hours had been bad in the last 3 months, the last 3 weeks had been even worse. I clocked more than 15 hours a day at a time and I got by with no more than 3-5 hours of sleep every day. Weekends included.

To add on to that, both Spud and Squirt took turns falling sick. Squirt had dengue 2 weeks ago with very high fever for a couple of days (in the midst of my crazy work deadlines) and continued with some dull fever for a few more days. We did not know it was dengue then, and thought that it was just one of the regular colds he’d gotten from one of his classmates.  Even with fever, he has been quite active and bouncing off the walls – not quite symptomatic of dengue. The first visit to the doctor 5 days after his fever had the doctor suspecting that it could have been dengue; and only because, any fever lasting more than 3 days, even a mild one was asymptomatic of dengue.

But seeing how active he was when the doctor saw him, he said it may not be even though he did say that the there was a possibility of a mutated version of dengue. He cautioned us to monitor his condition instead. 

Squirt was extremely whiney the next day, complaining of pain. We had thought it was from the rabies jab he had gotten the day before and so, we did not think anything more of it. His fever was quite mild, and I even thought that he was just exaggerating. Given my exhaustion from work and having to tend to him night after night when he had his fever, I raised my voice at him to stop his nonsense when he would not stop whining after half an hour. We brought him to school after almost a week of absence, thinking that he was already getting better. (And he wanted to be in school, too).

Not an hour after I settled in the office, I got a call from his teacher who told me that Squirt broke out in massive rash. She told me that he got watery, red eyes and was a little lethargic, even though he still had the energy to play with his friends. She had to isolate him, just in case. I quickly packed up, rushed to pick him up, called Silver Bullet and brought him to the hospital. A blood test was done and within the hour, the diagnosis was confirmed. It was bloody damn dengue! Damn bloody mossies!

Oh! The guilt for screaming at him in the morning! Fortunately for all of us, it was not a serious case of dengue. There was no hemorrhagic fever. He was just told to go home, take a lot of rest and to drink a lot of fluid as there is no medication for dengue. I stayed home that day…the guilt of raising y voice at him that morning crept in. He was quite a sorry sight and I just wanted to cuddle up with him. For Squirt, he loves the cuddles. He got to watch cartoons, drink Gatorade, do squat all day and got all pampered. Quite a life, I must say! 

He has since recovered and back to his normal, cheerful self. A few days later, his sister got sick. At least it wasn’t dengue. 

My sanity has been severely challenged in the past few weeks. I’ve been ultra snappy; to the kids (especially to the kids!), to Silver Bullet and to a certain extent, my staff (which I’m keeping in check to maintain that stoic professionalism). Unnecessary inconveniences do not bode well with me these days.  Sometimes I just want to scream, especially at those who mostly cruise along but having the nerve to complain of how much they have to do and how tired they are. I feel like I could implode. 

Exhaustion has fully consumed me and apart from the kids being better, I am not seeing any respite from the work front. Right in front of me, I have an avalanche of crap I have to go through to get to the other side, hopefully unscathed…

…as a an employee, as a leader, as a mentor, a career woman, a wife and a mother, who in the midst of it all is just trying to find a little time on the side to cook, juggle home-matters, to blog and getting just about enough sleep to get through the day.

It’s been a crazy September. All I can say is that the last quarter of the year is promising to be one hell of a ride!
