Fabulous Friday Flavour: Tumeric Fried Rice with Chicken Nibblets

There is absolutely nothing not to like about Fried Rice. It’s tasty, it’s yummy, it’s filling and oh-so-versatile!

Got left-over steamed rice you don’t want to throw away? Fried Rice. Got left-over chicken/beef that you don’t want to keep for another day? Fried Rice. Got some vegetables in the fridge that won’t last for the week? Fried.Bloody.Rice!

And I’m saying that with a term of endearment because it’s always one of my go-to dishes when I run out of ideas or time to cook or on slow days left with some left-overs that needed a  make-over. Of course, you can always make it fresh too and not wait for left-overs. You can’t quite screw up a fried rice in my opinion.

So here’s another of Grubbs ‘n Critters creation of Fried Rice using tumeric:

Tumeric Fried Rice with Chicken Nibblets

Ingredients
  1. 2-3 cups of rice, boiled (make sure it is not too soggy)
  2. 1 big red onions, chopped
  3. 1 clove garlic, roughly cut
  4. 3-4 green chillies (optional)
  5. 2 potatoes, cubed small
  6. 5-8 strings of long green beans, cut
  7. 1/4 teaspoon tumeric powder
  8. 2 eggs
  9. 2 tbsp chives
  10. 1 tbsn parsely
  11. Salt & pepper
  12. 2 tbsp olive oil
  13. Optional: left-over cooked meat or fresh meat of your choice
Instructions
  1. Boil rice and set aside
  2. Blend-up onion, garlic, green chillies
  3. Peel and cut potatoes into small cubes. Put it in the microwave for 5-6 minutes (I do this to save time to soften the potatoes as they take a long time to cook). Set aside
  4. Heat up oil in a wok. When it is hot enough, add in the blended ingredients and fry for 4-5 minutes
  5. Add in tumeric and mix well. This will make the paste yellow.
  6. If you are using fresh meat, add them in. Otherwise, add in the potatoes and long beans. Mix well till potatoes are tender
  7. Add cooked meat if you are using cooked meat. Crack the eggs into the wok and let it sit for 5-10 seconds.
  8. Add in rice then stir it all up and mix well.
  9. Add in parsely, chives, salt and pepper to taste
  10. Fry for about 5-10 minutes and turn off the fire.
