Fabulous Friday Flavour: Flavourful Home-styled Baked Chicken

Something easy, something quick and this recipe brings about the moist in the usually dry chicken breasts.

  1. 2-4 pieces chicken breasts
  2. 1/2 inch ginger
  3. 2 shallots
  4. 1/4 teaspoon cumin seeds
  5. 1 lemongrass
  6. A dash of tumeric powder
  7. 2-3 stalks of fresh coriander
  8. salt and pepper to taste
  1. Heat up the over to 180 degrees
  2. Soak cumin seeds in hot water and drain after 2-3 minutes
  3. Pound or blend ginger, shallots, drained cumin seeds and lemongrass. Add a little water to the mixture for easier blend.
  4. Add a dash of tumeric powder, salt and pepper to the blended ingredients and mix well
  5. Rinse the chicken breasts and slice the top lightly to create a pocket
  6. Then use it as a marinade to the chicken breasts, making sure that you stuff the marinade into thepockets.
  7. Set aside for half an hour in an aluminium foil. Crimp the edges loosely
  8. When ready to put into the over, place the fresh coriander on top of the chicken and cover the aluminum foil again
  9. Bake for half an hour to 45 minutes or until chicken is cooked and moist
  1. This dish is quite versatile. Although, if you go over board with the cumin, it may get a little over-powering.

You can choose to eat it on its own with salad on the side, serve it with rice or shred it as a filling for a sandwich or pita bread. Or just get creative!


And yes, not forgetting that it’s very kid friendly too.
