No-cream Quiche

Quiche has never quite been my favourite food, but in the recent months, I have discovered that its simplicity is a life-saver if I want to whip up something really quick. When done right, it makes for a decent and hearty meal.

True to my calling, I meddled with the original recipe a little and added my own little twist to it. Here’s my recipe and one that has won the hearts and stomachs of both  Silver Bullet and Spud.

No-cream Quiche

Ingredients
  1. 5 eggs
  2. 1 half cup skimmed milk
  3. Half a cup evaporated milk
  4. 1 cup grated Parmesan cheese
  5. 300g- 400g minced beef
  6. Half an onion chopped finely
  7. 1 tablespoon curry powder
  8. 1 capsicum, sliced thinly
  9. A layer of ready-made dough (store bought)
  10. Salt and pepper to taste
Instructions
  1. Heat the oven at 180 degree Celsius
  2. Saute chopped onions for a few minutes. Add in minced beef and curry powder.
  3. Stir well till beef is cooked. Set aside.
  4. Line an over container with dough and set aside
  5. On a separate container, whisk eggs and milk together
  6. Add in Parmesan cheese and stir well
  7. Add salt and pepper to taste
  8. Mix in the cooked beef together into the batter
  9. Pour all of the mixed ingredients into the container that was lined with dough
  10. Top with capsicum and put the container into the oven for about half an hour

A morning in Chatuchak

Venturing out to Chatuchak happens to be of the one activity in Bangkok which we haven’t got round to doing with two young kids in tow. Not that we haven’t thought about it, and to be really honest, the main reason we haven’t is because we did not have the courage to do so.

If you have been to Chatuchak, you would know that it is a massive, massive place filled with crowds on every single weekend. And for us, the place just feels a little too intimidating and far too stressful for shopping around with little kids in tow.  We haven’t quite stepped foot in there for more than 3 years since Spud was born.

We have, however, gotten a little (just a little!) bolder to venture out there once again by tagging along with Silver Bullet’s parents when they were in town. We lasted no more than 1.5 hours and just enough time to discover that not much has changed.

There seemed to be a new gig where an Italian guy set-up of freshly-made paella in a huge pot and he did his cooking with so much gusto and exaggerated demonstration that it becoming an attraction to the surrounding crowd. I have to admit that his plate of paella really looked good, but it wasn’t ready for consumption just yet.

I am also very glad to know that our favourite chicken rice haunt is still there. It still is the best chicken rice in Thailand.Its business is booming, and the area seems to have expanded. We bought some chicken rice home and they still tasted awfully good.

I don’t think we can be bothered to do any mindless shopping over there, but rest assured that we would try to haul our asses back there just for their fabulous chicken rice.

Being outsmarted

Squirt really does have his moments when it comes to being “difficult”. When he is adamant to getting to what he wants, he has proven that come hell or high water, he is going to get his way.

Case in point while we were out on an errand one afternoon:

Squirt was getting super, hyper-active and usually, that is symptomatic of him being extremely spent and over-tired. When he gets that way, he runs around like a headless chicken, climbs anything and everything he could get to, and does not want to be picked up. If you dare try to take anything away from him or pick him up, he would respond with a scream and a doomsday-everything-is-falling-apart cry as he squirms to get himself out of your clutches.

We were ending our day that day. Half an hour prior, he has already started to worm and squirm himself out of my grip earlier on and it was already a feat to chase him when he wanted out.  As a means of distracting him I offered him a quarter-full mineral bottle as I scooped him into my arms to get to the car. I was using my last and final burst of energy to prevent the little monkey of getting away.

Squirt was annoyed, but determined. He then threw the bottle I gave him earlier on to the floor, and while I thought that he had accidentally dropped it at first, I realized soon enough that he had actually done it on purpose; because , just when I squatted down to retrieve the bottle, the little monkey saw the chance to escape from me and ran off towards his Papa several meters away.

It then dawned on me that the cheeky monkey had actually figured out that when he dropped the bottle,  he knew full well that  I would have to bend down, and when I did that, I somehow would have to put him down first to pick the bottle up.

My reaction was slow, and only realized that he had already wormed himself  out of my hands when I picked up the bottle. He was not interested in the bottle, in fact he just ran away from it.  Oh the cheeky monkey! I have been outsmarted.

Squirt 1,Mama 0. Bloody hell.
