Fabulous Friday Flavour: Ayam Goreng Balado (Padang Chilli Fried Chicken)

Inspired by an Indonesian recipe tucked away in one of  my recipe books, I decided to put a spin on the traditional Ayam Belado recipe by frying the chicken first using some herbs and spices, then adding in some dijon mustard to the sauce.

It’s crispy, it’s fiery, it’s sourish and bursting with flavour.  If you love spicy dishes and one that is incendiary, this dish is for you. If not, just go easy on the chillies!

Ayam Goreng Balado (Padang Chilli Fried Chicken)

Ingredients
  1. 8-10 pieces of chicken breast (with skin and bones!)
  2. 1.5 tbsp tumeric powder
  3. 1 tbsp dried basil
  4. pinch of salt
  5. Oil for frying the chicken
  6. 5-8 pieces of fresh red chillies
  7. 1 red onion, peeled
  8. 1 can of tomato puree
  9. Quarter inch of fresh tumeric, peeled
  10. 1-2 pieces asam keping
  11. 2 tbsp dijon mustard
  12. 1-2 tbsp brown sugar
  13. Half a lemon
  14. 2 lemon grass, bruised
  15. 2 tbsp olive oil
Instructions
  1. Smear chicken with tumeric powder and dried basil with a little bit of water and a pinch of salt.Mix well.
  2. Fry chicken in hot oil till the skin becomes crispy. Set aside, drain the excess oil and assemble the chicken in a separate pan
  3. Pulse fresh chillies, onion and fresh tumeric. Leave the texture coarse
  4. Heat up olive oil in a pan or skillet. When it is hot enough, add in the pulsed chillies, onions and fresh tumeric. Fry till it gets a little dry. Be careful not burn it
  5. Add in tomato puree, mustard and lemon grass. Mix well and cook for about 10 minutes. Add Asam keping and brown sugar. Squeeze half a lemon. Continue to mix for another 5-10 mins. Turn off the fire
  6. Transfer the sauce and glaze it all over the chicken.
  7. Serve with rice

  1. Warning: Can be very addictive. Enjoy! =D
