Buttered Tomato Rice

My recent creation of a meal repertoire for the family and toddler-friendly food is the tomato-based rice. I have adapted the recipe from various sources I found on the web,  gave it a little twist of my own by using several types of spices and thought that it is worth a repeat, especially so when my family loves it.

A staple that originates from the Indian kitchen, tomato rice is not only easy to prepare, but also makes for a healthy and fuss-free meal.

Ingredients
  1. 2-3 cupful of steam rice that is a little under-cooked
  2. 4-6 medium sized shallots
  3. 1 piece garlic
  4. 1 cm piece of ginger
  5. 3 tablespoon of butter (increase quantity if you prefer it to taste more buttery)
  6. 2 fresh tomatoes
  7. 3 cloves
  8. 2 cardamoms
  9. 1 bay leaf
  10. 1 teaspoon fennel seeds
  11. 1/2 teaspoon tumeric powder
  12. salt to taste
  13. Fried shallots as garnish
Instructions
  1. Blend ginger, shallots , garlic and tomatoes together – set aside
  2. Heat up butter till it turns a little brown
  3. Saute cardamoms , bay leaf , cloves and fennel in the butter till it gives out a little fragrance
  4. Add in the blended ingredients and followed by the powdered tumeric. Fry them for about 5-10 minutes or when it gets less watery
  5. Add in the slightly under-cooked steam rice and mix well
  6. Season with salt and fry it all till the rice is cooked
  7. When ready, garnish with fried shallots which also serves as taste enhancement.
Notes
  1. Guaranteed to be yummilicious that would motivate second-helpings. Feel free to serve with chicken soup and egg on the side.
