Fabulous Friday Flavour: Broccoli and Shredded Chicken Fried Noodles

The kids needed their noodle fix! An easy way out was, for me to buy a bunch of instant noodles that can be made in mere minutes and that would be the easiest meal ever.

While we enjoy eating instant noodles (and mainly only those from Singapore), it’s something that we do only very occasionally.

With the kids, we tend to be a little bit more restrictive of them eating instant noodles for they are not the most nutritious of meals. We do, however, admit to indulging them every once in a while; but only eating a few spoonfuls and nothing more. 

Me being my mother, it’s hard to deny the kids’ request for certain food they want to eat. It’s just how my brains are wired with no room in my heart to say no to food request.

So a healthier version was made using only fresh ingredients mixed with chicken pieces that were boiled with bay leaf and ginger before being shredded :

A simple, home-made fried noodle dish that yes, would take a little longer to make and still using dried noodles, but that was  compensated with loads of other nutrients and healthier flavours.  

It’s got meat and greens seasoned with wholesome natural flavours. Best of all, this noodle was made with love. I’m taking this dip over to #FiestaFriday. Make sure you mosey over there as well. Enjoy!

Broccoli and Shredded Chicken Fried Noodles

A healthier version of fried noodles packed with wholesome, natural flavours.

Ingredients
  1. 2 chicken breasts
  2. 1 bay leaf
  3. Half an inch ginger (to be used for the chicken)
  4. 1 medium onion, chopped fine
  5. 1 garlic, pressed
  6. Half an inch ginger, chopped fine (to be used as base for noodles)
  7. Half a candle nut, finely chopped
  8. 1 cube chicken bouillon
  9. Half -1 head broccoli, cut into small florets
  10. 300g beansprouts (cleaned)
  11. 3-4 blocks of noodles, boiled and drained
  12. 2-3 sprigs of spring onion, chopped
  13. A handful of dried shallots for garnish
  14. 2 tbsp olive oil
  15. Pinch of salt
Instructions
  1. Boil chicken with bay leaf and ginger with a pinch of salt till cooked. Then shred to pieces and keep aside. Keep the broth for later use .
  2. Boil the noodles. Drain and set aside
  3. Heat a deep pan with olive oil. When the oil is hot enough, saute shallots, ginger, garlic and candlenut for a few minutes. Then add in the stock with 1-2 ladles of broth from the chicken. Mix well
  4. Add in the shredded chicken to the mixture. Stir and add in broccoli. Add more broth if you prefer your noodles a little wet
  5. Stir fry for about 2-3 minutes, then add in the noodles, beansprouts and spring onions
  6. Cover for about 2 minutes and mix it all up
  7. Serve hot. Garnish with dried shallots
Notes
  1. You need not add more salt to the noodles as the bouillon would usually be salty enough and you can always substitute broccoli with other types of greens

Poison is The Oldies

While listening to the radio the other day (Thank Heaven’s! Finally English music on Dutch radio!), I discovered that people here (or at least the radio station I have been listening to) categorised songs from the 90s like Sting’s Shape of My Heart (released in 1993), Alanis Morissette’s Ironic (released 1995), Green Day’s Warning (released in 2000) as well as the likes of Nirvana and Pearl Jams as oldies.

You read that right. OLDIES! I’ve never given that much of a thought really and to hear that those songs are now considered as oldies is my BIIIIIGGG OMG moment.

Eeeks! Hadn’t expected THAT!

I mean I grew up in that era, listening to such music and no, I’m far from oldies-old thank you very much. Now, let’s get this right as “oldies” to me would refer to songs from the 60s and before. Not those from the 90s onwards!

But I guess time has changed. What I would consider as “oldies” would now be ANCIENT. Still, I think that songs were way, way better from the oldies and the ancient eras. 

That said, this song Poison by Alice Cooper has been playing in my head. Yep. An “oldie”. A grrrreeeeat oldie may I add.

Cheesy video, big hair, guys with eye makeup, skinny jeans….the works. All of which, especially those epic skinny jeans has made a comeback in this Millenium. See, oldie is cool!

**not exactly accurate as there’s one “It’s” somewhere in there and a couple “IT”, but I figured “IT” can be left out and there’s one  “IT’S” with an apostrophe which I’d consider as ONE word so that should be valid, shouldn’t it? In case it doesn’t, I have taken it/them out and got creative;  I’m wondering if anyone notices it!

Growing Turmeric

One of the must-haves in my stock collection of spices would be none other than turmeric. It’s an ingredient I use often in my cooking and one that I can’t do without.

Be it in the form of powder, rhizomes or leaves, it has been one of my favourites amongst all the other spices. Fearing the not so easy access to turmeric powder especially the fresh rhizomes, we made sure that we brought some with us to the Netherlands.

We bought these rhizomes the night before we left for the Netherlands and we’ve kept fresh in our fridge since. Apart from using them for my cooking, the sole purpose of bagging them along was so that Silver Bullet could plant them.

We discovered that turmeric is a hardy plant as each time we thought that the plant seemed to have died with no more leaves left and only the soil remained, the plant surprised us.  It would start budding again within days the moment its thirst was quenched with LOTS of water. This happened every single time!

He was hoping to replicate his success in growing them when we were still living in Bangkok and wanted to grow our own turmeric plant in our backyard. More so for the leaves than anything else, really.  

Native to Southern Asia, turmeric plants grow well in temperatures between 20 °C – 30 °C and thrive in a place with a considerable amount of rainfall. Its leaves impart quite a distinctive flavour and I often use them in special, traditional dishes like Rendang and Ayam Lemak Chilli Padi to name a few. 

Both dishes happens to be Silver Bullet’s favourite and he is well aware that they don’t taste as good or as authentic without the leaves.

So now that you understand the motivation for Silver Bullet wanting to grow turmeric plant, it wasn’t at all surprising that Silver Bullet was again determined to grow another pot in our backyard.

He enthusiastically planted some rhizomes within the first few weeks of our arrival (in May), and almost gave up as there had been no signs of life after 2 months.

But in August, something magical happened.  

Several buds had appeared and within days and I mean just DAYS, the leaves started sprouting. Now, four months later, the turmeric plant is growing like there’s no tomorrow.

What do you know – we have now got ourselves fresh weeds turmeric leaves.  That could only mean one thing: Rendang is on the menu! Look at those broad, huge leaves. The fragrance would be amazing!

Plus, if I ever run out of the fresh rhizomes, I could Silver Bullet can always dig up a few. We’d be happy to share some with you too!

Next up on Silver Bullet’s agenda: Curry Leaves. That would be a tricky one!
