Fabulous Friday Flavours: Crispy Fried Shallots Cheese Puffs (Gougère)

What could go wrong with savoury pastry made of choux dough that’s mixed with cheese, crispy bits of fried shallots and chives all of which are baked in the oven?

 

Nothing!

Especially not with crispy outer shells with an eggy, cheesy and soft centre when you pull each  of those puffs apart.

Mmmmm….just mmmm…mmmm.

The crispy shallots is my add-on to a typical Gougère (French-style Puff Pastry) that gives the flavour a different twist. The inside is hollow and I like that despite all the cheeses used, the texture turns out to be very light.  

Crispy Fried Shallots Cheese Puffs (Gougère)

Ingredients
  1. 3/4 cup water
  2. 80g butter
  3. Half tspn salt
  4. Half tspn freshly ground black pepper
  5. 2 tbsp fresh chives, chopped
  6. 1 cup fried shallots, crushed
  7. 1 cup self-raising flour
  8. 4 large eggs
  9. 125g x 2 mozzarella cheese, pulled apart
  10. Half cup + Half cup parmesan cheese, grated
  11. Half cup gouda cheese, grated
Instructions
  1. Preheat oven to 200 degree Celsius and line a baking tray with wax paper
  2. In a deep saucepan, melt butter and mix it with water, salt and ground black pepper
  3. Add flour and stir until it forms a shiny, sticky dough. Cook for a few minutes till all the dough come together (it will not stick to the side of the pan).
  4. Turn off the heat and let it cool
  5. When cooled, add egg one at a time. Stir each egg well till combined
  6. Add in the cheeses, fried shallots and chives. Mix well.
  7. Using a tablespoon, scoop the dough into a ball and place it on the wax paper. Repeat till all the dough is used up
  8. Sprinkle more grated parmesan cheese on top.
  9. Bake at 220 degree celsius for 10 minutes. The continue baking at about 180 degree celcius for another 10-15 minutes till the top turns golden brown.
Notes
  1. The use of fried shallots is optional and feel free to substitute chives with parsley instead.

As you can see from the recipe above, it is pretty straight-forward with hardly any tricks required. More importantly, this is perfect for appetizers before a meal or served as snacks for tea-time of afternoon coffee!

1. Who are you named after? No idea really. But I remember being told that my paternal grandfather gave me my real name after a Javanese princess. I don’t know how true that is as Indonesians who saw my name without knowing or talking to me and based on my name alone would think that I’m a man!

2. Do you like your handwriting? Sometimes. I could write nice and I could write illegibly depending on my mood.

3. What is your favorite lunch meat? Chicken, chicken, chicken.

4. Longest relationship? Current one..will be together 13 years in April. Or was it 14? Or 12?

5. Do you still have your tonsils? Yup

6. Would you bungee jump? Not anymore. I’m jittery in my old age; although I would consider it for a million dollars. Maybe. 

7. Do you untie your shoes when you take them off?  No. My shoes don’t have laces.

8. Favorite ice cream? Mint chocolate chip and Cookie Dough Dynamo 

9. What is the first thing you notice about people? Eyes, their eyelashes. Then their smile. 

10. Football or baseball? Neither.

11. What color pants are you wearing? Dark Blue Jeans

12. Last thing you ate? Homemade Hungarian Ghoulash!

13. If you were a crayon, what color would you be? Magenta (I don’t know the fancy names)

14. Favorite smell? My kids’ head and their pillows. 

15. Who was the last person you spoke to on the phone? Silver Bullet

16. Hair color?  Mostly black with a mass of silver in between along with brown highlights.

17. Eye color?  Very dark brown. Almost black.

18. Favorite foods to eat? Fried chicken with crispy skin, Chocolate and Buttery Fudge

19. Scary movies or happy endings? Depends on the mood. I sometimes find scary movies to be mostly hilarious than scary and happy ending movies are always good. 

20. Last movie you watched?  The Polar Express (for the 2nd time)

21. Favorite Holiday? Any holiday is a favourite holiday. I take what I can get!

22. Beer or Wine? The latter

23. Night owl or early bird? Both. I”m nocturnal by nature but I have turned to an unwilling early riser since the kids were born and since they started going to school, there’s no escaping being an early bird.

Green Day Radio Revolution 2017

7 years later and there we were punk-rocking it all out to Green Day once again since we last saw them in Bangkok (2010); this time all the way in the Netherlands, Mecca of Live Concerts last week

Next to us sat stood a father who brought his 7 year old kid who sung along to some of the songs and turning the dudette into a huge Green Day fan (that’s what I’d call good parenting!).

To our right, there sat an older and grumpy American lady next to her husband who chided me with “Are you f***king kidding me” when I needed to pass her for the very 1st time to go to the toilet. She then proceeded to stare down at me with evil eyes when I subsequently needed to get out to use the toilet twice more after.  

Now I don’t know what her issue was, but I reckon she must not have enjoyed the concert very much as she was hardly at her seat. Still…she does not have to be an ass to me when I needed to pass her to go to the loo.  

The entire place was fully booked with not one empty seat in sight. At the free-standing area, pockets of mosh-pits were organically created throughout the entire concert.

Green Day still gave one of the most entertaining, energetic and engaging concerts that lasted close to 3 hours. At one point, Billy Joe asked for someone from the crowd to come up to the stage to join in and play the guitar.

One guy played rather well and just was when he was about to take out his phone for a selfie at the end of the rendition, Billy Joe told him off and banned the selfie. Instead, he was offered the guitar in which he could bring home. I think I saw the guy’s jaw dropped to the floor!

Much like the Green Day’s concert in Bangkok, their performance was laden with fireworks, confetti and brilliant music. Billie Joe Armstrong’s live vocal was still second to none, sounding as similar like he always did.  

Speaking about vocals, he was also very vocal about his sentiments on the political issues of his country. Let’s just say he gave a big middle finger to that. 

The rest was history. We had a jolly good time and I just can’t get enough!
