Monthly Mystery Munchies #24: Giraffe-Print Inspired Swiss Roll

Wouldn’t you believe it? 24!

Not Kiefer Sutherland 24 but twenty-four as in the 24th edition of our Monthly Mystery Munchies.That’s 2 straight years of monthly cooking challenge between Gen, our talented Cheftress over at Eat, Play, Clove and myself.

Between the both of us and come rain or shine or arthritis, we have conjured up 48 new recipes every month based on an agreed theme without fail to date.It feels almost surreal!  

On top of that, we take turns with the monthly challenge that comes with a twist:
* neither of us knows what the other person would be dishing up based on the theme chosen by the other person
* we post our recipes roughly at the same time. We still have not coincidentally made the same dish. 

I’m saying…WOW. Just WOW. We have come very far and we are not about to stop.  Happy Anniversary dear Gen! I think a separate post to list of all the dishes we made would be in order. Soon. Ish.

Before that though, let me share with you Gen’s challenge for this month: Make a dish with colours. It has to be with red, green and yellow.  It was THAT specific.

While broad, simple and technically easy to interpret, I did have a hard time deciding what to do. My first thought was dessert and that made me think of macarons. I made macarons before – it was not spectacular and it was a helluva lot of work! I’m not yet ready to go back there.

Of course I could also go with red, green and yellow capsicum. But that did not move my mojo. Instead I wanted to do something which has been on my mind for a while; a recipe I have never attempted before and adding the 3 colours would make it interesting.

Cue silly, excited grin. I’m making Swiss Roll!

Initially, I toyed with a simple stripey 3-coloured roll but somehow spurred to attempt something a little different that landed me with some ridiculous multi-coloured, giraffe-inspired design requiring quite a bit of effort.

With red velvet colouring as the base, I decided to add lime juice for the green and include peaches for the filling to give it a touch of yellow. Yeah. Call me crazy.

So I spent more than 2.5 hours on my feet and of course I face palmed myself while at it because I made myself do so much work. But I really enjoyed it. And even though the red did not turn out as red as I wanted to, I think it turned out well for the very first try.

My biggest satisfaction came from rolling without breaking the cake, then slicing it to see that it rolls rolled up nicely and then being able to attest how soft and light it is was.

Unfortunately my family did not think the peach bits was such a good idea. While I thought it enhanced the overall flavour, kids (both!) and Silver Bullet did not like the taste and/texture of the fruit bits.The kids picked the bits of peaches out like they were some nasty vegetables.

Bummer.

I thought that was the best part! Why wouldn’t anyone like peaches?! I don’t understand why they picked out the small bits. My family is weird.  The roll is G-R-E-A-T with peaches!

There are loads of Giraffe-Inspired Swiss Roll recipes out there and this recipe was adapted from Everybody Eats Well in Flanders blog which I had randomly found while searching for a good Swiss Roll Recipe. That said…

Here we go with my tried, tested and modified Grubbecipe’s style in response to Gen’s colour challenge:

Giraffe-Print Inspired Swiss Roll
Soft, spongy, colourful, creamy and fruity all Swiss-Rolled for your eating pleasure!

Print Batter
  1. 1 egg white
  2. 1 tsp caster sugar
  3. 1 tsp plain flour
  4. 2 tbsp egg yolk cake batter (see below)
  5. Green colouring
  6. 2 tbsp lime juice
Egg Yolk Cake Batter
  1. 3 egg yolks
  2. 20g caster sugar
  3. 60 ml water
  4. 40ml sunflower oil
  5. 72g plain flour
  6. 1 tspn Vanilla extract
  7. 6g cocoa powder
  8. Red colouring
Egg white Batter
  1. 3 eggs whites
  2. 50g sugar
  3. 1/4 tspn cream of tartar
Filling
  1. 150g mascarpone cheese
  2. 200g whipping cream
  3. 4 tbsp icing sugar
  4. Peaches, diced
Instructions
  1. Line a shallow rectangular tray with wax paper and grease with baking spray. Set aside
  2. You need 4 eggs altogether. First separate 3 egg yolks from the whites and set aside. Then separate the one yolk from white and set aside (you only use the white, the other yellow is extra)
  3. Heat up the oven at 170 degree celcius
For egg yolk cake batter
  1. Beat the 3 egg yolks in the cake mixer.
  2. As it mixes, add sugar, vanilla extract, water and oil. Mix well.
  3. Add in sifted flour and beat till creamy. Do not add the cocoa powder yet.
  4. Set aside 2 tbsp of the batter for the print batter
For the Print batter
  1. Whisk 1 egg white. When it gets foamy, add in sugar and green colouring.
  2. Whisk till you get a stiff peak
  3. Add in 2 tbsp of egg yolk batter set aside earlier, followed by the lime juice and 1 tspn plain flour. Mix well.
  4. It should not be too runny. If it is, add another tbsp of flour.
  5. Transfer the batter into a piping bag (I use a ziplock bag and cut off one of the corners when ready to use) and put it in the freezer for 5-8 minutes.I do this to prevent it from being too runny when piped but not too long in the freezer such that it freezes.
  6. Pipe out the design. then randomly drew a giraffe-like lines all over with non-uniform holes in between.
  7. Bake at 170 degree Celsius for about 1 minute and remove from the oven
For the egg white batter
  1. Whisk the 3 egg whites with cream of tartar till foamy
  2. Then add in sugar and whisk till you get stiff peaks
  3. Go back to the egg yolk batter. Now you can mix the cocoa powder. Mix well. The add the red colouring.
  4. Roughly apportioning the egg white batter in 3 ways, scoop the first portion into the egg yolk batter and lightly fold it in. Continue to fold gently and lightly for the remaining 2 portions. Do not over-mix or it will deflate the cake
  5. Pour the already mixed egg yolk and egg white batter for the cake into the tray prepared earlier. Even out the surface and lightly bang the tray on a hard surface a few times to remove trapped bubbles
  6. Bake for about 14 minutes and remove when done.
For the filling
  1. Whisk mascarpone cheese and icing sugar till creamy
  2. Add in the whipping cream and whisk till the mixture looks firm and silky. This would only less than 1 minute so be careful not to over mix or it get lumpy. Set aside.
Putting it all together
  1. Quickly invert the cake onto a cooling rack. With the design facing up, remove the was paper gently for the design to remain intact
  2. Prepare a fresh sheet of wax paper on a cutting board and put it on top of the flat cake to flip it to the other side (the design will now face down)
  3. With a spatula, generously spread the cream filling all over the cake. Top with the diced peaches
  4. Using the wax paper, gently roll up the cake starting from the longer side
  5. Secure the edges and let it chill in the fridge before serving
Notes
  1. For better design, print the design you want and trace the lines on the baking paper. The paper must be well-greased or risk sticking paper to the cake upon baking.
  2. This cake is not too sweet and if you prefer a sweeter Swiss Roll, add 5-10g more sugar to the filling or other flavours to the batter itself.

 The roll was devoured within 2 days with no crumbs left. So I stood by my verdict that it turned out OK for a virgin attempt and getting the shades of colours for the challenge right. That said, I’m certainly game to give this another tinker; especially since I still have some leftover cream left. Cue excited, evil laugh.

A Re-Blog: Ever Notice Those Recurring Numbers?

Or call it numerology. Or whatever you call it, don’t you think that it gets a little freaky when you keep seeing the same number each time you look up at your clock every single day, every single time, at one particular moment?

A few weeks back, I came across Danny’s post on recurring numbers over at Dream Big, Dream Often. It reminded me of a period when I had recurring numbers of mainly 22:22 or at times, though not as often, a variation of it with 02:22, 02:02, 20:20.

That occurrence happened years ago; right about the period after the kids were born.

Especially with 22:22, numbers I would never forget for that was the numbers I saw every time I looked up at the clock. It was always at that precise moment. That one point in time when I chose to know what the time was –  either to go to bed, to feed the kids, to change their nappies or go to the kitchen to pick up something.

Although intrigued and sometimes felt a little weirded out, I never thought much about it or its significance. I took it as pure coincidence or that my internal clock has just synched up with time. According to Danny’s post though:

If we keep seeing recurring numbers in our daily routines or in our dreams, you can think of it as a sign from the Universe that it is trying to catch your attention; perhaps, think of it as a signal from invisible forces working in nature that are trying hard to put your focus on more important matters in life.

Further down in his post for the meaning on the recurring numbers of 222 :

These numbers are a confirmation that your way of thinking, patterns, and all that you do in life are now aligned with your true purpose. It is the universe’s way of telling that, whatever you are doing now, it is working and you should keep doing that.

Well, well! How interesting is that! Had anyone told me that 10 years ago, all that I did in life were aligned with my true purpose – that is to say that being a mother of 2 kids is my true purpose, I’d say I’ll be damned. Heck. I would even laugh at your face.

But then again, I saw four 2s. Danny only mentioned three 2s. There’s a difference there. 

Maybe I should start researching about it. Get to the bottom of discovering my spirit guide and try to find out what it actually meant then; if it meant anything at all. Not that I would change anything; I wouldn’t. Still. It’s an interesting thought.

I don’t see any numbers recurring anymore these days. At least not in the recent years. But if anything, I’d like to see 3s…because in more ways than one, I can do with a little help. I bet we all can do with a little help!

Road Trip Day 3: BS in Antwerpen

From spending the day in Antwerp’s Zoo and then the day after playing tourist in another city of Belgium in Brugge, we decided to take things easy before we start driving back home in the late afternoon.

We left our Air BnB slightly after 10.30 a.m: no coffee and no breakfast! We all were hungry as hell and luckily for the kids, they had some light croissants to tie them over till we get ourselves some real food. 

Unfortunately, as it was a Sunday, many places were closed. We spent close to an hour walking back and forth about a drive away from our Air BnB just trying to find a place  to get our coffee fix and a light breakfast.  While walking about, we stumbled upon an establishment with a little bit of everything under one roof – from a butcher shop to a cheese shop, a bakery (only take-away), a chocolate shop, a brewery, a bar and a BBQ-Resto.

They had everything but coffee. Their BBQ place was only opened from noon onward. We decided that we’ll wait it out.

And what a wait that was because it was absolutely worth it!

Had we moved on, we would not have discovered BS. That’s short for Black Smoke, a fantastic BBQ restaurant serving a really good brunch/lunch selection. Located on the corner of Boomgaardstraat and the Haringrodestraat in Antwerp.

There was something about the decor which I found fascinating. The entire interior looks like the building is charred like a rundown burnt building; the atmosphere feels vintage and abandoned. It looks almost freaky, exuding a hostile and cold setting.

The resto came with an open kitchen, 2 chefs seriously barbecuing some serious meat! Add these images below to the description above and you’ll wonder if you would be the one who’d end up being barbecued:

There is a certain charm about it which I can’t quite put my finger on despite the seemingly cold decor. Once seated inside though, the place feels cosy. It helps that the staff are friendly to mitigate the otherwise almost impersonal atmosphere. 

The best part about BS? I have to say we were not disappointed with the food. At all!  In fact we were pleasantly surprised considering that both Silver Bullet and I are not big fans of barbie food. The food exceeded our expectations.

The Egg Benedict with Brisket was by far the best Egg Benedict I have ever had! Ooohh..how the yolk oozed and how the brisket just melted in your mouth. The spinach and spices that came with it were really good together!

The sauces while not spicy gave the dish a nice touch. The kids had kids’meal consisting of pancakes, some chickens and crispy, crunchy-but-soft-on-the inside wedges. I also love how the food is being accessorised with custom-styled BS’s signature.

We did not order much but we left the restaurant with a full stomach and a big smile on our faces; the after taste of the Egg Benedict and Brisket still subtly lingered in our mouth for a while more after that.

It was by far the most satisfying meals we had whilst in Belgium, not to mention very reasonable prices.  It’s a place we’d go back to again. And if you are ever in Antwerp, there’s no question that Black Smoke is one of the places to dine.

We ended our trip with another round of walk-about at the almost-closing Sunday market, a cafe stop for a cup of hot chocolate and coffee as well as a little bit of mucking about with the kids before hitting the road again for the 2-hour drive home. 

It was a good weekend and we’ll be looking forward for more!
