Fabulous Friday Flavour: Spicy Stir Fry Vegetables with Egg
Category: Fabulous Friday Flavours
After several days in Singapore and stuffing our faces with fabulous home-made food, I decided to do something simple from whatever leftovers I can find in the fridge.
Turned out, I had some fresh chillies, a bunch of Chinese cabbages, a couple of taters and a single, lone egg. So here we go with an easy, no-fuss, left-over ingredient-dump stir fry!

Spicy Stir Fry Vegetables with Egg

Prep Time
5 min
Cook Time
8 min
Ingredients
- 1 small shallot, sliced
- 1 garlic, pressed
- 5-6 fresh red chillies
- Half an inch fresh tumeric, remove skin
- Half a cube of non-msg chicken stock cube
- 2 teaspoon dried basil
- Chinese cabbage, sliced
- 2 potatoes, peel and cubed
- 1 egg
- Olive oil
Instructions
- Rinse all ingredients well before cutting
- Put the cut potatoes in a (microwaveable) bowl of water and put them in the microwave oven for 5 minutes
- While waiting for the potatoes, pound shallot, garlic, tumeric and chillies together. Or use a hand blender and blend them coarsely. Set aside
- Heat up olive oil in a pan
- Throw in the pounded ingredients into the hot oil and fry for about 2 minutes. Then add in the chicken stock cube. Be careful not to burn it
- Dump the cut-up cabbages in the pan. Cover with a lid for 2-3 minutes then stir
- Drain the water from the potatoes and then add into the pan.Add in dried basil. Stir and cook for another 2-3 minutes
- Crack the egg into the pan. Leave it for about 5-10 seconds and then stir well
- Make sure that the potatoes are cooked - check if they are soft before turning off the heat
- Serve!
