Fabulous Friday Flavour: Flavourful Home-styled Baked Chicken

Something easy, something quick and this recipe brings about the moist in the usually dry chicken breasts.
Flavourful Home-styled Baked Chicken

Ingredients
- 2-4 pieces chicken breasts
- 1/2 inch ginger
- 2 shallots
- 1/4 teaspoon cumin seeds
- 1 lemongrass
- A dash of tumeric powder
- 2-3 stalks of fresh coriander
- salt and pepper to taste
Instructions
- Heat up the over to 180 degrees
- Soak cumin seeds in hot water and drain after 2-3 minutes
- Pound or blend ginger, shallots, drained cumin seeds and lemongrass. Add a little water to the mixture for easier blend.
- Add a dash of tumeric powder, salt and pepper to the blended ingredients and mix well
- Rinse the chicken breasts and slice the top lightly to create a pocket
- Then use it as a marinade to the chicken breasts, making sure that you stuff the marinade into thepockets.
- Set aside for half an hour in an aluminium foil. Crimp the edges loosely
- When ready to put into the over, place the fresh coriander on top of the chicken and cover the aluminum foil again
- Bake for half an hour to 45 minutes or until chicken is cooked and moist
Notes
- This dish is quite versatile. Although, if you go over board with the cumin, it may get a little over-powering.

You can choose to eat it on its own with salad on the side, serve it with rice or shred it as a filling for a sandwich or pita bread. Or just get creative!
