Fabulous Friday Flavour: Egg Fried Rice

There are many variations of fried rice out there and frying rice with eggs is one of the simplest to make.

For busy parents, this is a quick and easy recipe to follow as a repertoire meal. Not only it requires the basic of ingredients, it also makes for a healthy meal. For fried rice monsters out there, a good egg fried rice is all the comfort food you’ll ever need.

Ingredients
  1. 2-3 cups of left-over cold boiled rice
  2. 1 large yellow onion, chopped
  3. 2 cloves garlic, roughly cut
  4. 2-3 large eggs, beaten
  5. 2 potatoes, cubed small
  6. 2-3 sprigs of spring onions, chopped
  7. 1 tbsp dried basil
  8. 2 tspn light soy sauce
  9. Salt to taste
  10. 2 tbsp olive oil
  11. Fried shallots as garnish
Instructions
  1. Blitz onion and garlic
  2. Peel and cut potatoes into small cubes. Put it in the microwave for 5-6 minutes (I do this to save time to soften the potatoes as they take a long time to cook). Set aside
  3. Heat up oil in a wok. When it is hot enough, add in the light soy sauce
  4. Then add the blended ingredients and fry for 4-5 minutes
  5. Add the potatoes and stir fry for about a minute
  6. Put in the cold rice
  7. Pour beaten eggs on the side and then mix well till all the rice are covered with the egg mixture
  8. Add salt to taste
  9. Add in the spring onions and dried basil.Mix well
  10. Fry for about 5-10 minutes and turn off the fire.
  11. Garnish with fried shallots and serve!
Notes
  1. You don't have to blitz the onions together with the garlic. Instead you can choose to cut the onions in chunks, press the garlic and saute them when the oil is hot enough. That works just as well, too.
