Chicken Pesto

Always a  delightful do-over dish for the family when I’m in a little of a cooking rut with little time to spare, The Chicken Pesto has become one of my favourite cheat-sheet recipe that saves us from starvation:

Ingredients
  1. 1 packet of pesto sauce mix (I love McCormick. Use 2 if you use more chicken or if you prefer less band taste)
  2. 6-8 pieces of chicken breasts with bone
  3. 1-2 yellow onions, sliced
  4. 60 ml coconut milk
  5. olive oil
  6. Salt and Pepper to taste
Instructions
  1. Heat up the oven
  2. Rinse the chicken thoroughly and pat dry
  3. On a sheet of aluminium foil, evenly rub the pesto mix powder onto the chicken. Add salt and pepper
  4. Cover the seasoned chicken with the sliced onions
  5. Drizzle olive oil over the onions
  6. Crimp the aluminum foil together end-to-end loosely to keep it moist.
  7. Put in the oven for 30-45 minutes

Presto Pesto! Ready to serve with salad, rice or any type of pasta you wish.

Pesto is a great base and I have come to appreciate it much more than I would ever imagine I could. The colour may look a little on the yukky side, but the taste is too addictively delicious to ignore; even the kids love ’em!
