Baked Mozzarella Sticks

Left-over mozzarella cheese that just begged to be experimented upon makes for a very satisfying comfort food:

Ingredients
  1. 16 pieces String Cheese, Removed From Wrappers
  2. ½ cups All-purpose Flour
  3. 2 whole Eggs
  4. 3 Tablespoons Milk
  5. 1 Tablespoon Dried Parsley Flakes
  6. Canola Oil, For Frying
  7. Marinara Sauce, For Dipping
  8. 2 cups bread crumbs
Instructions
  1. Slice string cheese pieces in half
  2. Place flour in a small bowl.
  3. In a separate bowl, whisk eggs and milk.
  4. In another separate bowl, combine bread crumbs with parsley flakes.
To Assemble
  1. One by one, roll mozzarella sticks in flour
  2. Dunk in egg/milk mixture
  3. Place in crumbs.
  4. Use your hand to sweep crumbs all over the mozzarella stick.
  5. Gently remove and place on a tray or cookie sheet.
  6. Repeat until all mozzarella sticks are coated.
To Cook
  1. Heat 1 1/2 inches canola oil in a large skillet over medium heat. When hot, add mozzarella sticks 8 at a time. Watch closely and turn over to evenly brown, cooking less than 2 minutes. Do not allow cheese to bubble and leak OR
  2. Dump them in the oven to bake for about 10 minutes or until they turn golden brown
  3. Remove to a paper towel-lined plate.
Notes
  1. Once assembled place the tray of mozzarella sticks in freezer for 20 to 30 minutes to flash freeze.
  2. Serve immediately with warm marinara sauce
